Amaranth Lotus Purple is a striking 8ft tall robust heavy yielder with thick red-purple flower heads full of purple-black seeds. The young leaves are deliciously edible as baby salad leaves or cooked as spinach. The seeds are edible very nutritious and excellent ground into a flour or cooked like oatmeal. The plant prefers full sun and normal garden soil. Sow the seed directly in the spring garden and thin to about 1 foot apart or grow in small pots before planting out after frosts have finished.
